Acquerello Carnaroli rice aged 1 year, 500 g tin

Carnaroli rice from Acquerello (Tenuta Colombara, Piedmont). Acquerello says its rice is aged for at least one year in refrigerated silos, which makes the starch in the grain more stable, and is milled with a gentle ‘helix’ process that keeps each grain intact; the germ is then restored to the white grain.
